Whole Turkey

Remember some ovens, such as fan-assisted ovens cook your turkey quicker than these recommendations - always check the manufacturers handbook if possible. 

Pre-heat oven to 190 degrees celsius or gas mark 4.

Rinse your bird in cold water before cooking.

Turkeys under 4.5kg require 45 minutes per kg.

Turkeys between 4.5kg and 6.5kg require 45 minutes per kg plus 20 minutes.

Turkeys over 6.5kg require 45 minutes per kg plus 35 minutes.

Boneless Turkey Crown

Pre-heat oven to 180 degrees celsius or gas mark 4. Cook for 25 minutes per kg plus 20 minutes.

TIP: Cover your turkey with foil during cooking and uncover for the last 30 minutes to brown the skin. To stop the meat drying out, baste it every hour during cooking. These cooking times are based on an unstuffed turkey, it's better to cook your stuffing separate, but if you cook your turkey with stuffing inside, you will need to allow for extra time.

 

Goose

Pre-heat oven to 220 degrees celsius or gas mark 7.

 

Cook for 35 minutes per kg.

TIP: Pierce the skin before cooking and drain off excess fat halfway through cooking.

 

Duck

Pre-heat oven to 200 degrees celsius or gas mark 6.

Cook for 45 minutes per kg.

TIP: Pierce the skin before cooking and drain off excess fat halfway through cooking.

 

REMEMBER: These are only estimates and you should check your bird is cooked before serving. You can do this by putting a sharp object into the under part of the breast area and making sure the juices run clear.
